Sous Chef (Pastry & Intercontinental)

About this role

A full-time, shift-based Sous Chef (Pastry & Intercontinental) role based in Gwarinpa, Abuja. You will lead the pastry, bakery and dessert section and support the Head Chef with the intercontinental menu, acting as the Head Chef's deputy; time split about 60-70% pastry and desserts and 30-40% intercontinental work.

What you would do

• Design and refresh the dessert, pastry and bakery menu, including signature African-inspired desserts
• Prepare breads, pastries, cakes, ice creams, mousses and celebration desserts to a consistent standard
• Support the preparation and execution of intercontinental dishes (pastas, sauces, seafood, salads, etc.)
• Run the kitchen in the Head Chef's absence
• Enforce quality, plating, portion and allergen standards across both sections
• Maintain strict food safety, hygiene and HACCP standards

• OND / HND / Diploma in Culinary Arts, Pastry & Baking, Hospitality or Catering
• Preferred: Bachelor's degree or professional pastry diploma from a recognised international school
• Food Safety & Hygiene certificate and Allergen Awareness (required)
• 4 - 6 years professional kitchen experience, with at least 2 years focused on pastry and intercontinental cooking
• Strong portfolio of pastry and dessert work
• Experience supervising a team and deputising for a Head Chef is an advantage
