Hygiene Manager
About this role
The Hygiene Manager will implement, manage and continuously improve hygiene, sanitation and food safety standards across the hotel, ensuring compliance with Hyatt policies, HACCP principles and local health regulations. The role focuses on F&B operations, training staff, conducting inspections and maintaining documentation. It requires coordinating with the Executive Chef and other departments to uphold safety and quality. The position is based in Lagos and is full-time. The employer is Hyatt Regency Lagos Ikeja, a luxury hotel in Ikeja, Lagos.
What you would do
- Establish and maintain the hotel's Food Safety Management System based on HACCP.
- Prepare for and manage local government health inspections.
- Ensure compliance of kitchens, outlets, bars, storage areas and production spaces with hygiene regulations.
- Conduct routine hygiene inspections and follow up on corrective actions.
- Design and deliver ongoing food safety, hygiene and sanitation training for staff.
- Coach department heads on best practices and ensure daily operational compliance.
- Maintain hygiene certification and training records for all team members.
- Monitor food handling, storage temperatures, receiving processes and personal hygiene practices.
- Validate sanitation of equipment, utensils, cold rooms and workstations.
- Lead internal hygiene audits and support third-party audits.
What they are asking for
- Experience with luxury or international hotel brands preferred.
- Degree or Diploma in Food Science, Microbiology, Hospitality Management or related field.
- 3–5 years of hygiene, food safety or QA experience in a hotel, cruise or food manufacturing environment.
- HACCP Level 3/4 or equivalent certification.
- Proficient in documentation, reporting and compliance systems.
- Excellent training and communication skills.
- Strong organisational skills and attention to detail.
- Knowledge of HACCP, FSMS, ISO 22000 and local food safety laws.
- Ability to conduct detailed audits and implement corrective actions.
