What you would do

• Monitor food, beverage and operating costs to ensure they stay within budget.
• Conduct and verify stock counts and monitor stock movements; investigate discrepancies or wastage.
• Check purchase orders, invoices, receiving records and supplier prices.
• Calculate food and beverage costs and help set appropriate selling prices.
• Reconcile daily sales from restaurants, bars, room service, banquets against POS and accounting records.
• Compare actual costs and revenue with budgets or targets and explain significant differences.
• Analyse profitability of menu items and identify over- or under-performing products.
• Monitor spoilage, breakages, complimentary items, staff meals and unauthorized consumption.
• Prepare daily, weekly and monthly F&B cost and performance reports for management.
• Assist with budgets and financial forecasts in collaboration with the Finance Manager/Financial Controller and F&B Manager.
