Chef de Cuisine - All Day Dining

A Chef de Cuisine for all-day dining at Hyatt Lagos, responsible for leading a large culinary team in a luxury hotel setting. The role suits someone with extensive international hotel or upscale restaurant experience, including previous leadership at a senior sous or similar level.

What you would do

• Lead and develop a culinary team of 20-50+ colleagues.
• Oversee menu development and engineering for international, Nigerian and breakfast concepts.
• Manage cost control and food cost, inventory, purchasing, and scheduling.
• Ensure HACCP and food safety compliance across all dining operations.
• Coordinate with Front Office, Events, Stewarding and Purchasing teams.
• Support pre-opening activities and high-volume service periods.

• Minimum 5-8 years of progressive culinary experience, including 2-3 years in a senior role (Chef de Cuisine, Executive Sous Chef or Senior Sous Chef) in an international hotel or upscale restaurant.
• Experience in a 5-star hotel environment.
