Chef de Cuisine – All Day Dining

About this role

A Chef de Cuisine for All Day Dining at Hyatt Regency Lagos Ikeja, responsible for leading high-volume dining operations in a luxury hotel environment. Suitable for experienced chefs with a background in international hotels or upscale restaurants.

What you would do

• Lead and develop a culinary team of 20–50+ colleagues.
• Plan and execute all-day dining concepts, live cooking stations, and large-scale breakfast and Sunday brunch operations.
• Oversee menu development, recipe maintenance, and engineering of menus for international and Nigerian dishes.
• Ensure HACCP and food safety compliance across all kitchen activities.
• Manage labour scheduling, productivity, inventory, purchasing, and food cost control.
• Collaborate with Front Office, Events, Stewarding, and Purchasing teams and support pre-opening and high-volume periods.

• Minimum 5–8 years of progressive culinary experience, including 2–3 years as Chef de Cuisine or in a senior sous role in an international hotel or upscale restaurant.
• Experience in a 5-star hotel environment preferred.
• Strong background in live cooking, international and Nigerian all-day dining, and large-scale breakfast buffets.
• Knowledge of kitchen hygiene, occupational health and safety standards; basic MS Office skills and recipe systems preferred.
• Qualification in Kitchen Production or Management advantageous.
