African Cuisine Chef

About this role

A Nigerian and African cuisine focused role based in Abuja at Cedar Grillz & Lounge. You will lead the African kitchen section, preparing authentic dishes to refined restaurant standards while honouring traditional flavours and presentation, and work with the Head Chef on menu development and events.

What you would do

• Prepare a full range of Nigerian and African dishes, including soups, swallows, jollof and other rice dishes, pepper soup, asun and moin moin.
• Deliver authentic taste with modern plating.
• Work with the Head Chef to design, test and refine the African menu, specials and event menus.
• Maintain standardised recipe cards and document the cultural story behind signature dishes.
• Prepare stocks, stews, pepper bases and mise en place ahead of service.
• Check every dish for taste, seasoning, texture, temperature and presentation.

What they are asking for

• SSCE/WAEC/NECO with credits in English and Mathematics, plus a certificate or diploma in Professional Cookery or Catering.
• OND, HND or degree in Hospitality or Culinary Arts (preferred).
• Food Safety and Hygiene certificate and Allergen Awareness are required.
• 4 to 6 years of professional experience cooking Nigerian and African cuisine, with at least 2 years as Chef de Partie or Lead Cook.
• Proven expertise across several regional Nigerian cuisines; knowledge of other African cuisines is an advantage.
• Portfolio of dishes is preferred.
